Method

  • step 1

    Heat the oven to 190C/170C fan/ gas 5. Tip the oats into a heatproof bowl, then pour over 450ml boiling water from the kettle. Stir well, then stir in the vanilla and almond milk.

  • step 2

    Mash the banana, then spread over the base of a medium baking dish (ours was a 20 x 28cm oval) and stir in the frozen fruit to fully combine. You want the banana to sweeten the berries, but you can add 1 tsp maple syrup, if you like. Pour over the oat mixture and scatter with the almonds. Bake for
    30-40 mins until set and the fruit juices are bubbling at the edges of the dish. Scoop into bowls and serve with a little extra milk, if you like.

Can i use normal milk if i am not vegan?

Followed exactly, and it worked, but in future I would sub some of the water for plant milk to make it more creamy, and I think it needs more fruit. It is ugly as hell once cooked!

I followed this recipe perfectly and it does not work. It took around 45 minutes to set even then it was still very liquid heavy and gelatinous. There's far too much liquid in this recipe and no raising agent to stabilise it. It tastes good but the consistently is grim.

As I’m allergic to bananas, what else could I use for the base as an alternative?

I would just use more berries but the banana adds a lot of sweetness so you would just have to add some sugar (refined or non-refined e.g. maple syrup as you prefer!) into the porridge mix
