Method

  • step 1

If you're cooking them in the oven, heat it to 180C/160C fan/gas 4. Put the oats in a blender and pulse a few times until they start to resemble flour. Add the baking powder, chopped banana, maple syrup or honey, eggs and mixed spice or cinnamon, and whizz until smooth. Stir in the chocolate chips or berries.

  • step 2

If using an air-fryer rather than an oven, heat the air fryer to 180C for 4 mins. Lightly oil four heatproof ramekins, then divide the batter between them. Bake for 8-10 mins in the air-fryer or 20-25 mins in the oven until well-risen and the baked oats spring back when lightly pressed. Scatter with more chocolate chips or berries before serving, if you like.

Baked a double batch of this in a big ceramic crumble dish (who actually has individual ramekins?). Did not bother grinding the oats to flour in a mixer because life is too short for all the extra washing up. Did 100g dark chocolate chips and 100g frozen sweet cherries and totally forgot the honey.…

Delicious and easy to make. I made it as per the recipe using maple syrup and chocolate chips, the only change I made was to add a pinch of salt. I am not a fan of porridge, so this is a good way to add oats to my diet. Will definitely make again.

I made these without blending and they're just as good chunky if you add a splash of milk

Just made this and it was delicious, but I changed it a bit, following other people’s comments. Added a pinch of salt and twice as much maple syrup. Didn’t have banana so added full fat yoghurt plus splash of milk. Mixed with apricots, strawberries and chocolate chips. Yum.
