Method

  • step 1

    Mix most of the cheese with the ham or gammon, egg yolks, mustard, herbs and some seasoning. Whisk egg whites until stiff. Using a rubber spatula, gently fold the whites into the yolk mixture until evenly mixed.

  • step 2

    Heat a splash of olive oil in a small non-stick frying pan. Pour mixture into the pan and cook for 4 mins until the underside is set and browned. Sprinkle over the remaining cheese and grill for 2 mins until cheese is bubbling and golden.

My son loved this. I whisked the egg whites manually so it was just exhausting but well worth the effort. Also don’t use a huge frying pan like I have. If you use a smaller pan I find the eggs do puff up and soufflé as long as the whites have been whisked and folded carefully. If the pans too big…

This is so yummy, I would highly recommend it! I couldn't be bothered to whisk the whites so they where stiff, but as long as you whisk until white and frothy, it still turn out relatively okay. It's easy to cook as you just leave it to do its thing! Make sure to add plenty of herbs/mustard

Good easy to follow omelette recipe - worked a treat. I didn't have any fresh dill or basil so I used a tsp of dried basil instead. Defo use that one again - so easy!! My husband was dead impressed with this brunch!!
