  • 500g pork shoulder diced
  • 200ml natural yoghurt
  • fresh coriander chopped
  • fresh mint chopped
  • 1 tsp cayenne chilli pepper
  • 2 chillis finely chopped
  • 1/2 lemon (or lime) juice and zest
  • 3 garlic cloves crushed
  • Salt and pepper
  • 1 or 2 green peppers cut into large chunks

    Method

    • step 1

      Put diced pork in a bowl with lemon, garlic, chilli and herbs
    • step 2

      Mix in natural yoghurt and cayenne pepper, salt and pepper to taste
    • step 3

      cover and place in the fridge for 2 - 3 hours to marinate
    • step 4

      Remove skewers from water and place pork and green pepper on
    • step 5

      Cook under medium grill for 15 - 20 mins or place on barbeque

    I thought it was strange that this recipe recommends fresh mint with pork - the two flavours just don't go together, result was awful.

    Nice and easy to make, makes fantastic kebabs, I did swap out the skewers for pita bread's and threw together a mint yoghurt to pour on top of them but this recipe makes an excellent marinade for the pork.
