Method

  • step 1

    Heat the oven to 180C/160C fan/gas 4. Butter the base and sides of a small baking dish. To make the sauce, sieve the cocoa powder into a jug and stir in the caster sugar. Gradually pour in 250ml boiling water until well combined and smooth. Set aside.

  • step 2

    For the cake, sieve the flour and cocoa powder into a large bowl and stir in the sugar and espresso powder. Make a well in the middle and pour in the melted plant butter, Jord oat drink, and vanilla, whisking until smooth. Stir through the chopped chocolate and spoon into the prepared baking dish. Carefully pour the hot sauce into one of the corners, pouring it over the back of a spoon so it does not make a hole. Bake for 40-45 mins until a skewer inserted gently into the middle comes out with a few crumbs clinging to it (make sure you are just testing the pudding, not going all the way down to the sauce). Leave to stand for a few minutes before serving.

Checked on the pudding after 30 minutes and it was already over cooked. So that left it with barely any sauce and dry. The pudding was also not sweet enough but may have been fine if there was more sauce. Definitely don’t cook for as long as it says.

Really amazing recipe, not too sweet unlike other recipes. I must have cooked it for too long as I didn't really have any sauce. 10/10 will make again!

I don't understand the instruction about pouring the sauce in the corner but not making a hole? Don't you need to make a hole so that the sauce goes underneath the sponge? Could someone explain the technique a little further? Thanks

Hi, thanks for your question. You'd think it should go underneath, and we agree it seems the wrong way around, but this style of pudding actually needs the liquid to be poured carefully on the top of the cake batter. As it cooks it will sort itself out and you'll end up with the sauce at the bottom!…
