Method

  • step 1

    Take a rolling pin or cleaver and smack the cucumbers so that they split, then chop into 2.5cm pieces. Put in a bowl with all the remaining ingredients and 1 tsp salt, and toss together. Serve alongside any of the other dishes.

This is a great snack to take to work, leave out the sugar (it doesn't need it)and it's almost no calories. I use some sambal oelek or chilli paste in place of chilli oil. Drop the garlic if you're not keen, it's still good...
