Method

  • step 1

    Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.

  • step 2

    Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

RECIPE TIPS
CHICKEN WITH GREENS & TARRAGON FOR 4

Swap the salmon fillets for 4 skinless chicken breasts. Allow 25-30 mins cooking time for the chicken, and stir in the broad beans and peas with 2 tbsp chopped tarragon for the final 10 mins of cooking time.

Easy & flavourful. I added garlic to my sauce but omitted the herbs. Served with new potatoes & broccoli 🥦. I’m sure it is just as good with mash but I went for the easy option. Definitely do it again 👍

How do you reheat this from frozen?

Hello, defrost thoroughly then either heat in a lidded microwave dish until piping hot. Or place in a baking dish, cover with foil and cook at 180C fan for 30 mins. Make sure the fish is piping hot in the centre. Thanks for your question - Good Food Team!

This was really nice. I added two cloves of garlic, runner beans as didn’t have broad beans. I added a splash of white wine, lemon zest, black pepper and mushrooms. I served it with skin on cheesy mash and spinach.

Quick, simple and extremely tasty meal! Halved the amount of ingredients as I only had 2 salmon portions. Worked out just fine.
