  • 4 tbsp caster sugar
  • zest and juice 1½ lemon
  • 750ml bottle rosé wine
  • 150ml peach schnapps
  • 1 peach
    sliced
  • 1⁄2 lemon
    sliced
  • ice cubes
  • 1l bottle of soda water
    or tonic

Method

  • step 1

    Heat the sugar with the lemon zest and 100ml water until the sugar dissolves. Cool, pour into a jug and add the wine, lemon juice and schnapps.

  • step 2

    When ready to serve add plenty of ice and the fruit and top up with the soda or tonic to taste.

This was a big hit at a barbeque. Light and refreshing on a very hot sunny day. My sister in law said to make sure to make it for the next summer family gathering. As for the lemon zest others said was annoying, I just poured the syrup through a sieve before mixing in everything else.

Tried this at the weekend. Don't think I'd worry about the lemon zest again would just add extra juice the bits were annoying. Having said that after a few glasses you don't need to worry. Delicious!

An alternative but very potent is changing wine for vodka and adding pineapple juice then lemonade instead of soda, oh la la, a proper knee trembler but sooo nice!

Looks lovely. Going to a birthday BBQ on Saturday and after all the lovely weather, the forecast is for rain! I'm sure this drink will brighten us all up.
