Tamborine chicken
This tangy chicken works well with salad or rice and is delicious both cold and hot
- 300g jar lemon curd(we used Duchy Originals Traditional Lemon Curd)
- 500g tub 0% Greek yogurt
- 200g punnet raspberry
- 1 tbsp icing sugar

Method
step 1
Put the lemon curd and yogurt into a bowl. Fold together for a rippled effect. Divide the mixture between four glasses and chill.
step 2
Mix raspberries and icing sugar together and gently crush, then spoon with their juices over the chilled mix and serve.
RECIPE TIPS
MAKE IT WITH BLACKBERRIES
Line the bottom of a dish with ready-made sponges. Crush 200g blackberries with 2 tbsp icing sugar and spread on top. Spoon the lemon curd and yogurt mixture over the top, then scatter with toasted almonds.
TIP
Use raspberries at room temperature when their full flavour is at its best.

Made this for a dessert at a summer lunch party ( whipped feta and crudités as a starter, smoked salmon and watercress quiche as the main - all on bbc good food) absolutely lovely, fresh and summery, easy too.

Very easy to make, but really tasty. I made these in shot glasses, as part of an afternoon tea and added a whole raspberry to the top of each one. They were very popular.

So lovely! Served it in some leftover Gu pots so I halved the recipe to serve three of us (since the pots are a little small). I think I'd agree with the comments about decreasing the amount of lemon curd but it was still fantastic. I forgot about the shortbread but to be honest it really doesn't…
