Method

  • step 1

Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. Lift onto a baking tray and season with salt, pepper and the lemon zest. Sprinkle with 1 tbsp of the sage. Grill for 8-10 mins, turning once, until cooked through.

  • step 2

Meanwhile, pour the lemon juice into a small pan. Add the apple to the pan with the remaining sage, sugar, salt and pepper. Bring to the boil, stirring, then simmer until soft, about 6 mins. Serve with your favourite green veg and potato wedges (recipe, top right).

RECIPE TIPS
POTATO WEDGES

For simple, spicy wedges, cut 2 large potatoes into wedges and toss in 1 tbsp olive oil in a roasting tin. Season with salt and pepper, pinch each chilli, paprika and ground coriander and cook at 200C/fan 180C/gas 6 for 35-40 mins, shaking the pan halfway through the cooking time.

MAKE IT INTO A ROAST

One-pan roast pork: Heat oven to 220C/fan 200C/gas 7. Cut the apples, 2 onions and 2 large potatoes into wedges and put into a roasting tin with the sage leaves, lemon juice and sugar. Toss in 1 tbsp oil, then roast for 15 mins until starting to turn golden. Add 4 pork steaks or chops to the pan, season well, then roast for another 15 mins until cooked through and golden at the edges.

Very, very yummy, will become a regular I think. Even my 2 year old liked it!

Love this! Great way to cook tenderloin - so tasty and so tender (and so cheap!). I cooked mine in the multi-function oven with the grill and fan which meant it didn't need to be watched. 15 minutes and it was done. I nearly didn't bother with the apples but so glad I did - they stayed firm and…

Gorgeous! Never really knew what to do with tenderloin before! Made this for 2 so used half the quantity of tenderloin but kept the quantities of everything else the same and was perfect for 2. Served with wasabi mash (from the soy tuna and wasabi mash recipe) and loved the way all the flavours…

Made this tonight, but used pork loin chops instead. Was really yummy, and the apple on the side was a really good accompaniment. Served it with steamed green beans and roast parsnips, which complimented the pork well.
