Method

  • step 1

    Put everything except the fresh fruit in a food processor and blend. Scoop straight into bowls, or tip into a container and freeze if you want to serve it later. Serve with the fresh tropical fruit and spoon over the passion fruit seeds.

Full fat is better as it prevents ice crystals from forming when you freeze it. You’re only using 170g so it’s probably not much of a calorie disaster.

This was so easy and quick to make. Never made anything like this before and was really pleased with the results. Very tasty indeed! top tip the amount made was not enough for 6, in my view. I decided to make double the quantity and had enough for 7 guests, which included three hungry teens.
