Method

  • step 1

    Heat the oil in a large pan over a medium heat. Fry the onions for 10 mins until softened and beginning to caramelise. Add the kale and 100ml water, then cover and cook for 5 mins more, or until the kale has wilted.

  • step 2

    Cook the pasta following pack instructions. Drain, reserving a little of the cooking water. Toss the pasta with the onion mixture, soft cheese and pesto, adding a splash of the reserved cooking water to loosen, if needed. Season.

Going to be one of those annoying people who comments having made a thousand changes but thought this was very good if adding a bit of diced chorizo at the start, fry the onion in the oil it releases then add massaged the raw kale straight to that pan to sautĆ©- stopped it sticking together andā€¦

Excellent quick recipe. Great for making after a day at work. Season with black pepper.

Wasnā€™t really the best. Lack of flavour. Chicken would be a good add for non vegetarians and vegans. The kale clumped together.

The kale stuck together in big lumps and, as someone else has commented, it wasn't very tasty. I get my kale in an organic veg box so it comes as whole leaves complete with stalks. I de-stalked it and pulled it to pieces so it looked like supermarket kale but I still think it could have done withā€¦

Very nice - and adaptable! I substituted spinach for kale, used white macaroni, doubled the soft cheese and topped with chopped boiled egg. Delicious.
