  • 400g can chickpeas
    drained and rinsed
  • 3 1⁄2 tbsp mayonnaise
    or vegan alternative
  • 1 1⁄2 tbsp mango chutney
  • 2 tsp mild curry powder
  • 1⁄2 lemon
    juiced
  • 50g raisins
  • 1⁄2 small red onion
    finely chopped
  • 4 rolls or 8 slices of bread
    and Little Gem lettuce leaves, to serve

Method

  • step 1

    Pat the chickpeas dry using kitchen paper. Combine the mayo, chutney, curry powder and lemon juice in a bowl. Season well.

  • step 2

    Tip in the raisins, onion and chickpeas and mix to combine. Spoon the filler into rolls or sandwich between bread slices with a few lettuce leaves. Will keep chilled for three days.

Really love this recipe! Yes, I mashed the chickpeas slightly and soaked the raisins, too. I add a bit of smoked paprika for a slight kick. Friends love it so much, lost count how many asked for the recipe!

Does this freeze well?

Hi, thanks for your question. Because this contains mayonnaise we don't recommend freezing. Mayonnaise tends to separate when defrosted. We hope this helps. Best wishes, BBC Good Food Team.

Great recipe! I use homemade vegan mayonnaise and serve it daily as tapas in our restaurant. Non vegans totally love it and it's dairy and egg free! I don't mash the chickpeas or soak the raisins as it's not going in a sandwich. Excellent served on small lettuce leaves!

Yum! I've made this a few times and it is great. It also works if you swap the onion for spring onion and even the raisins for diced dried apricots! I agree to mash the chickpeas beforebadding the rest of the ingredients.
