Method

  • step 1

Combine the paprika, cumin, garlic granules, flour, buttermilk and a good pinch of salt and freshly ground black pepper in a bowl and mix well to make a smooth batter. Add the cauliflower florets and mix to coat the cauliflower.

  • step 2

Put the cauliflower florets in the air fryer basket in a single layer, shaking off any excess batter as you do so. You may need to cook in batches depending on the size of the basket. Cook on 200C for 18-20 mins, turning half way through, until browned on the edges.

  • step 3

Meanwhile, combine the hot sauce, olive oil and honey or maple syrup, if using, in a large bowl. Add the cooked cauliflower and set aside while you cook your next batch, if necessary. Gently mix all of the cooked cauliflower and hot sauce to coat. Finally, return all of the cauliflower to your air fryer basket and cook for 6-9 mins until hot and well cooked through.

question

Hi I am trying this recipe, but some of the quantities seem odd. 50g of flour did not make a batter- just orangy milk, so I changed it to 150g, making a thick, smooth batter. Also, 100g of hot sauce seems an awful lot (or maybe I am being weedy... I used 10g and it seemed enough to me. Are these…

Hi, thanks for your question. It just refers to any brand of hot chilli sauce, usually sold in small bottles with the other condiments. We hope this helps. Best wishes, BBC Good Food Team

Hi, thanks for your question. You can make your own dairy-free version of buttermilk. Mix 200ml plant-based milk (soya milk works particularly well, but any will do) with 1 tbsp lemon juice or vinegar. Mix the milk and lemon juice/vinegar in a jug. Leave at room temperature for 5-10 mins until the…
