Watermelon & feta salad
Serve this watermelon, feta and mint salad as a side dish at a barbecue or picnic. Bursting with fresh, summer flavours, it’s also two of your five-a-day
Take 1 round slice watermelon and cut into wedges, as you would a pizza, and lay them on a board. Scatter over 120g pineapple pieces, a few coriander or Thai basil leaves and 1-2 tsp toasted coconut flakes. Mix the juice ½ lime with 1 tbsp honey and drizzle over the top. Sprinkle with freshly cracked black pepper and zest ½ lime.
