For the roasted garlic & herb dressing

Method

  • step 1

    Heat oven to 200C/180C fan/gas 5. Tip the roots, potatoes and garlic cloves into a large roasting tin. Nestle the herbs in amongst them, then drizzle with olive oil and toss, so everything is well coated. Season and roast for 50 mins, or until all the vegetables are tender.

  • step 2

    Squeeze the roasted garlic out of its skin and blitz with the rest of the dressing ingredients. Alternatively, you can whisk these together in a small bowl. Toss the roots in the dressing, scatter over the nuts, feta and serve.

I added red onion wedges, sweet potato and some cherry tomatoes on the vine to roast on top… the roast garlic dressing was phenomenal! Only thing I must say, we still felt hungry afterwards, perhaps some nice garlic bread on the side next time!

Lovely recipe! Have made it twice now. Once as a side at Christmas dinner and once as an accompaniment to Coq au vin. Left out the seeds and feta. Have made with and without the dressing both are nice. I have used parsnip roseval potato and sweet potato or carrot. Thought sweet potato worked better

A wonderful recipe. I made just some tiny tweaks, like forgot the lemon juice but added more nuts and vegan feta (150 g of the latter). I had some doubts whether it would be enough for 4 people, as it didn't seem very much, but it was the perfect quantity.

tip

Excellent dish. I barely changed it other than making more dressing and not using quite so much parsley as I thought it would swamp the flavours. The roasted garlic was a wonderful ingredient.
