Method

  • step 1

    Heat oven to 160c/fan 140c/gas 4. roll out the pastry a little more on a floured surface and use to line a 30 x 20cm tin, or a Swiss roll tin. Line with greaseproof paper, fill with baking beans and cook for 10 mins. Take out the beans and paper, then return to the oven for a further 5 mins.

    Whisk together the mascarpone, sugar, almonds and eggs until well blended. Fold in the raspberries and chocolate, then pour into the tin. Bake for 20-25 mins until just set and lightly golden. Turn off the oven, open the door and leave the tray bake to cool gradually. For the best results, chill for at least 1 hr before slicing.

I’ve just followed this BBC recipe for Raspberry and White chocolate tray bake. Last week I did the same. Cooking it for 25mins. It was under cooked and went in the bin. Today’s bake I covered with grease proof paper and let it cook on 150/160 c until set. Which took 1hr 20mins.

Sorry, this was a complete disaster. I put it in the Swiss Roll tin, so the whole thing boiled off the tray, luckily I had the foresight to put another tray underneath, needs to go in a deep dish and at least another 20 mins cooking time. The consistancy was ok, but I thought it lacked flavour. Could have been a bit sweeter too.

Can you use a cheesecake bake instead of the pastry? Has anyone tried it?

27th July 2018 Delicious! Took a little longer than 25 minutes, just kept adding 3 -4 mins at a time until it looked set and browned. I did make all butter pastry with no added sugar as thought it would make it too sweet with the white chocolate. A big hit with the family so would make it again.
