  • 500g potato
    peeled and chopped
  • 2 tbsp vegetable oil
  • 1 onion
    roughly chopped
  • 340g can corned beef
    cut into cubes
  • 2 tbsp Worcestershire sauce
  • baked beans
    and a little curly parsley, roughly chopped, to serve (optional)

Method

  • step 1

    Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.

  • step 2

    Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

Awful! Maybe I did something wrong, although i cant see how as the method is exceptionally straightforward. Everything was going well, until the corned beef hit the pan, then it disintegrated into a mush. Yuck! Would not make it again.

Firstly, the corned beef….make sure its a decent quality… none of the Home bargains “CANNED beef” or similar cheap rubbish. Chill the corned beef for at least a couple of hours…leave in fridge overnight is best. Open the can and cut into cubes just as you're ready to add it to the pan. Make sure…

Great comfort food I actually put it in an oven proof dish, pour over the baked beans, covered with grated cheddar sprinkled wit the Worcestershire sauce and bake in the oven 25 min at 180°C, served with hispi cabbage cooked with chopped green chilli and grated nutmeg.

tip

Take the corned beef out of the tin and into the fridge for a bit - makes cutting it up into chunks easier once it’s chilled.
