Method

  • step 1

    Preheat the oven to 180C/fan 160C/gas 4.Toss the gooseberries with the caster sugar, spread in the bottom of a medium ovenproof baking dish with 2 tbsp water.

  • step 2

    To make the crumble, put the flour, butter and a big pinch of salt in a bowl. Rub together with your fingertips until you have a rough breadcrumb texture. Mix in the demerera sugar.

  • step 3

    Scatter the crumble topping evenly over the gooseberries. Bake in the oven for 45-50 minutes until top is pale golden and crunchy and the gooseberries bubbling. You can also give the crumble a quick flash under a hot grill to give the top an extra browning if you like.

My crumble sank into the gooseberry filling below, which was far too runny, and the cooked crumble came out resembling mushy stodge. Disappointing.

I added about 2 tbspns of elderflower cordial to the gooseberries, they complement each other so well. Also did my usual crumble mix of 6 oz. plain flour/3oz unsalted butter and 2 oz demerara sugar, plus a couple of handfuls of oats and about 2 tpsns ground almonds.

Made this for my Dad. I’d never made a crumble before, and he fancied gooseberries, so found this recipe. Couldn’t be simpler and, I’d never have chosen gooseberries myself, but they were amazing! I highly recommend this recipe.
