You don't have to soak lentils, but if you'd like to, it'll reduce the cooking time by about half. Before cooking, rinse lentils in cold water, pick over to remove debris, then drain. Lentils are also great in the pressure cooker; cook for around 20-30 mins (depending on the type).

When I cook lentils (red) they turn into mush. Do you know what I'm doing wrong?

Hi, thanks for your question. Red lentils can very easily turn mushy which is what we want when making a soup or some stews. To stop them turning to mush just cook them slightly less - test regularly and remove from the heat, draining any excess liquid, once cooked through but still with a tiny bit…
