- 250g unsalted butter (plus extra)
- 125g caster sugar (plus extra)
- 250g plain flour
- 125g of semolina or cornflour/fine polenta (not granules!)
Method
step 1
Preheat oven, 150 degrees C.step 2
Cream the butter and sugar.step 3
Add the plain flour and semolina or cornflour/polenta.step 4
Mix lightly.step 5
Press into a buttered 22cm square tin or a 20cm diameter round tin and prick with a fork.step 6
Bake for 50 minutes.step 7
Sprinkle with sugar.step 8
But into squares/slices whilst still hot and allow to cool.
