  • 250g unsalted butter (plus extra)
  • 125g caster sugar (plus extra)
  • 250g plain flour
  • 125g of semolina or cornflour/fine polenta (not granules!)

    Method

    • step 1

      Preheat oven, 150 degrees C.
    • step 2

      Cream the butter and sugar.
    • step 3

      Add the plain flour and semolina or cornflour/polenta.
    • step 4

      Mix lightly.
    • step 5

      Press into a buttered 22cm square tin or a 20cm diameter round tin and prick with a fork.
    • step 6

      Bake for 50 minutes.
    • step 7

      Sprinkle with sugar.
    • step 8

      But into squares/slices whilst still hot and allow to cool.

    Nice and short but too much sugar next time I would reduce it about 105

    question

    I've made a shortbread before using some cornflour and rolled the dough into a sausage and then cut into slices to bake as biscuits. Obviously I now can't find this recipe! Would this recipe work the same? Thanks in advance.

    Delicious shortbread. I pushed freshly picked blackberries into the dough before baking. Yum.....
