  • 2 Salmon Fillets - marinade in juice of 1 lemon and 2 tsp Cumin
  • 1tbsp Veg Oil or mustard oil
  • 1 onion
  • 2 cloves garlic
  • 2cm ginger
  • 1 tbsp cumin
  • 1 tsp coriander powder
  • 1/4 tsp chilli powder
  • 150ml vegetable stock
  • 1/2 tin of chopped tomatoes
  • Fresh Coriander roughly chopped

    Method

    • step 1

      Mix together the lemon juice and 2tsp of cumin in a bowl. Then add the salmon fillets and leave for at least 10 minutes.
    • step 2

      Heat the oil and fry onion, ginger and garlic. Cook until onion is soft.
    • step 3

      Add the cumin, coriander and chilli then the tomatoes and veg stock, stiring.
    • step 4

      Add the salmon to the pan and cook gently for 10 - 15 minutes until the fish is cooked.
    • step 5

      Add the fresh coriander and serve

    Great recipe, I make sure I char the skin so it's got a good texture first and then place the salmon skin-side up on top of the curry towards the end and slowly cook it. Lovely.

    Lovely recipe, I reduced the amount of cumin and added some green beans. Really quick and simple.

    Made this last night. Amazing!!!

    I took the skin off the salmon and cut it into large chucks. Cooked the sauce for a bit longer say 20-25min then reduced heat and added salmon for 15 min. The salmon stayed soft and moist. Just needs a bit if seasoning
