Asparagus and Ham Dinner

- 3/4 lb. fresh asparagus cut into 1 inch pieces
- 1 medium yellow pepper, julienned
- 3 green onions
- 3 tbsp. olive oil
- 3 cups diced fresh tomatoes
- 10 ounces cooked ham, cubed
- Salt and pepper
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- Pinch of cayenne pepper
- 1/3 cup grated Parmesan cheese
- Splash of white wine
Method
step 1
Saute asparagus, onions and yellow pepper in oil, until onion is translucent and veggies are tender.step 2
Add tomatoes, ham and wine.step 3
Mix in seasoning. Sprinkle cheese and heat thoroughly.step 4
Serve over pasta or rice.
