  • 4-6 pork loin steaks or whatever cut you prefer
  • 1 tin of chopped tomatoes
  • 1 red onion diced
  • 1 carton of coconut cream
  • 1 cup of chicken stock
  • 1/2 tsp cinnamon
  • 1 tsp ground allspice
  • 1tsp ground coriander
  • 1tsp garlic granules
  • 1tsp ground ginger
  • good dash of rum or malibu (optional)
  • 1tbs oil

    Method

    • step 1

      cut pork into bitesize pieces and fry in oil
    • step 2

      add chopped onion and tinned tomatoes
    • step 3

      and all spices stir well and cook for a few minutes
    • step 4

      add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutes
    • step 5

      serve with rice.. preferably rice and peas...enjoy
