- 4-6 pork loin steaks or whatever cut you prefer
- 1 tin of chopped tomatoes
- 1 red onion diced
- 1 carton of coconut cream
- 1 cup of chicken stock
- 1/2 tsp cinnamon
- 1 tsp ground allspice
- 1tsp ground coriander
- 1tsp garlic granules
- 1tsp ground ginger
- good dash of rum or malibu (optional)
- 1tbs oil
Method
step 1
cut pork into bitesize pieces and fry in oilstep 2
add chopped onion and tinned tomatoesstep 3
and all spices stir well and cook for a few minutesstep 4
add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutesstep 5
serve with rice.. preferably rice and peas...enjoy
