Baharat, Arabic for “spice”, is a special all-purpose spice blend widely used in Middle Eastern cuisine. Just a pinch of it adds depth and flavor to sauces, soups, grains, vegetables, stews and meat.

- 2 tsp coriander seeds
- 1 tbsp cumin seeds
- 1 tsp whole cloves
- 1 tbsp black peppercorns
- 1 tsp ground cinnamon
- 1 tsp cardamom pods, seed only
- 1/4 tsp nutmeg
- 2 tbsp paprika (not smoked)
Method
step 1
Put the whole spices in a small pan and heat until fragrant, stirring so they don’t burn. Cool, then grind with a spice grinder or pestle and mortar. Stir in remaining spices and store in an airtight jar.
