Ingredients
For Sponge-
- 75g butter or margarine
- 75g caster sugar
- 1 egg, beaten
- a few drops of vanilla essence
- orange juice to mix
For Butter Cream-
- 100g butter
- 175g icing sugar
- 2 tbsp milk
- 2 tbsp orange juice
- drop of vanilla essence
For topping-
- 1 0range, sliced
- jam, stirred
Method
- STEP 1Grease a tin with butter
- STEP 2Put the butter, sugar, egg, flour and vanilla essence all into a bowl
- STEP 3Mix with electric whisk
- STEP 4Add juice to mix
- STEP 5Put in greased tin. Cook in pre-heated oven for 30-40mins at 180C
- STEP 6While sponge is cooking, use the electric whisk to mix all of the dry ingredients for the butter cream
- STEP 7Add the milk and the juice to mix
- STEP 8After 30-40 minutes take out the sponge and leave to cool down for 5-10 minutes
- STEP 9Put an upside down bowl on the sponge a dig in to it by 1cm.
- STEP 10Cut off the outside rim produced by the bowl, add jam and put on the butter cream and put on the oranges
