  • 4 skinless boneless chicken breasts
  • 1 tbsp olive oil
  • 300ml chicken stock
  • 4 tbsp fine cut marmalade
  • 1 tsp thyme leaves

    Method

    • step 1

      Season chicken with salt and pepper. Fry in the olive oil for 10 minutes turning over half way
    • step 2

      Add stock, marmalade and thyme. Simmer for 5 minutes.
    • step 3

      Remove the chicken and keep warm.
    • step 4

      Boil the mixture to a syrup and pour over chicken.
