- 4 skinless boneless chicken breasts
- 1 tbsp olive oil
- 300ml chicken stock
- 4 tbsp fine cut marmalade
- 1 tsp thyme leaves
Method
step 1
Season chicken with salt and pepper. Fry in the olive oil for 10 minutes turning over half waystep 2
Add stock, marmalade and thyme. Simmer for 5 minutes.step 3
Remove the chicken and keep warm.step 4
Boil the mixture to a syrup and pour over chicken.
