250 g butter, melted (plus extra for greasing)

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup golden syrup
  • 2 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1 tsp baking powder

    Method

    • step 1

      Preaheat the oven to 150C or gas mark 2.
    • step 2

      Add the butter and sugar in a large mixing bowl and beat together till the mixture becomes soft and creamy in texture. Add the golden syrup and mix well.
    • step 3

      Using a sieve, shift the flour, ground cinnamon and ginger into the mixture. This will make sure that the mixture remains smooth and not lumpy.
    • step 4

      Once mixed, use a tablespoon to scoop up individual portions and roll into a loose ball. Gently press to flatten (but not completely) on a greased baking tray and place in the oven for 25 - 30 mins. Allow to cool before removing from the baking tray.

    This recipe doesn’t feel right, it’s really wet and sloppy and the biscuits spread completely to fill the whole tray. I spaced them out really far across 3 trays and they still merged.

    They slopped all over the trays and all over my oven. Made a huge mess and caused much anxiety. We now have a huge amount of square, diamond and triangle shaped thin ginger biscuits.

    But they do taste amazing.

    Are the amounts correct in this recipe ? My biscuits just congealed together to make a big tray and were also very oily (buttery)

    Great recipe but don’t melt the butter, room temperature butter works best. Still work ok but spread a bit too much if melted butter. I replaced a bit of the ginger with ground cloves which also works well.

    question

    I added baking powder as it was listed as an ingredient, even though there was no mention of it in the steps. I found the finished biscuits quite floury and dense and wondered if the baking powder might have had this effect?

    Hi, thanks for your question. This is a community recipe so hasn't been tested in our test kitchen. You'd normally sift the baking powder in with the flour and it shouldn't make them floury or dense - if anything it could be that this recipe might benefit from a bit more baking powder.
