  • 2 Cod Fillets
  • 50g Butter

30g Butter for the Sauce

  • 1 Glass of White Wine
  • 4 Large Spigs of Parsley

    Method

    • step 1

      Butter the baking dish.
    • step 2

      Add the cod, butter and white wine.
    • step 3

      Pre heat the oven to 220c or gass mark 7.
    • step 4

      Cover With foil and cook for 10-15 minutes.
    • step 5

      Remove fish with a slotted spoon and keep warm, Add the juices from the baking dish to a pan.
    • step 6

      Add the remaining butter and reduce untill the sauce slightly thickens.
    • step 7

      Serve with sprigs of parsley.

    Disappointing recipe. I did wonder with the lack of ingredients what this would be like and I wasn't wrong. Just a lovely piece of cod cooked in a load of butter and wine. No seasoning mentioned and the sauce didn't thicken. I will stick to making sauces my own way in future.

    I became a member just to review this recipe. Absolutely delicious!! Four ingredients that make a beautiful meal. Simple, elegant and luxurious. Served this with creamy smooth mash potatoes. Couldn't get enough.
