  • 3 ripe bananas, mashed
  • 1/2 cup sugar
  • 100g butter, melted
  • 1 egg
  • 2 tbsp milk
  • 1 1/2 cups of flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups chocolate chips

    Method

    • step 1

      Heat oven to 190 deg (170 on fan bake). Grease a 12 hole standard muffin tin or use paper muffin cups.
    • step 2

      In a bowl add mashed bananas, sugar, melted butter, egg and milk and stir to combine.
    • step 3

      Sift flour, baking powder and baking soda into banana mixture and stir to combine. Then stir in chocolate
    • step 4

      Spoon mixture into prepared pan and bake for 20 to 25 minutes.

    Excellent recipe, will try with less choc chips next time, just to see, but these were so light and fluffy. I made them with gf sr flour and a large egg, very ripe bananas. Excellent flavour 👍😁

    tip

    I found it looking a little dry before adding the chocolate chips so added an extra egg. Also probably added only 250g of choc chips but this was great. Made for excellent muffins. I'd probably also add some vanilla extract and/or cinnamon next time just to give it some added flavour

    These were lovely, I used demerara sugar and only had 90g of dark choc chips (just under half a cup) but this was more than enough.
