  • 125g Butter
  • 125ml sunflower oil ( or any cooking oil)
  • 250ml water
  • 3 Tablespoons cocoa powder
  • 300g Flour - plain or cake flour
  • 400g Sugar
  • pinch of salt
  • 1 teaspoon bi carbonate of soda
  • 2 eggs
  • 150ml natural or plain yogurt

For the Icing:

  • 75g Butter - softened
  • 2 Tablespoons cocoa powder
  • 2 cups of icing sugar

    Method

    • step 1

      In a saucepan, melt together butter, oil, water and cocoa powder.
    • step 2

      In a large bowl, mix together all the dry ingredients. Now pour over the wet mixture, and stir well.
    • step 3

      Add eggs and yogurt, and stir well again.
    • step 4

      Pour mixture into a greased 12x8 inch baking pan or glass pyrex dish. This is a single layer cake, but Im sure you could use two 8" cake tins.
    • step 5

      Bake at 180 deg C for 30 minutes.
    • step 6

      Icing: Mix all ingredients together with a small amount of milk. Pour over cake immediately.

    I thought it odd when adding vast amounts of water ? and oil ? It really is not a good cake ! not a cake even ? a waste of good ingredients. I shouldn't have relied on the reputation of this site to assure me a good recipe !

    I thought I was baking a cake but it isn’t really. As a pudding it’s OK but I followed the recipe exactly & cooked it for over an hour.... in a cake tin and it’s still extremely soggy. I suppose I should have been warned by the instruction to bake in a glass Pyrex dish...... odd for a cake. …
