  • 200g apricots [ready to eat ones] chopped small
  • 275 self raising flour
  • 75g desiccated coconut [ or ground almonds or half and half]
  • 2tsp baking powder
  • 225g soft margarine
  • 225gcaster sugar
  • 4 eggs

    Method

    • step 1

      preheat the oven to 160/325/gas3/
    • step 2

      measure all ingredients into large bowl and beat well for 2 min then pour in to a 2litre loaf tin that has been well greased. bake for 1-1/2 hours or until skewer comes out of cake clean. leave to cool in tin for 10min and turn out .enjoy with a nice cuppa

    Reviews are so old. Anyone tried recently? Or has another preferred recipe for an Apricot and Coconut cake?

    Just made this cake, using half almonds and half coconut. Only had 1 orange to zest, and the mix seemed a little stiff so added a splash of milk. It's absolutely delicious and I will definitely be making it again.
