Ingredients
- 100g butter or margarine softened
- 150g caster sugar
- 150g self raising flour
- 1/2 tsp baking powder
- 1tsp vanilla extract
- 2 eggs
- 1tbsp milk
buttercream
- 150g butter
- 300g icing sugar
- 1/2 tsp vanilla
- 1tbsp milk

- strawberries
Method
- STEP 1First , preheat the oven to 170 fan ,190 celsius or gas mark 5 and line a 12 hole cupcake tray with cupcake cases.
- STEP 2Next, add all the ingredients into a bowl and mix until fully incorporated and there is no lumps left
- STEP 3then add a even amount of batter into all the cases and make a hole in the middle of each case so they rise evenly
- STEP 4Then place them in the oven for 20-25 minutes or until a knife comes out fully clean in them.
- STEP 5Once cooked place on a cooling rack and leave to cool completely.
- STEP 6To make the buttercream cream the softened butter for 10 minutes until pale and fluffy or until of changed white in colour
- STEP 7Then sieve in the icing sugar half at a time and mix until it is creamy and there is no lumps then add the milk and vanilla until soft enough to pipe with
- STEP 8Then add the buttercream to a piping bag with a piping nozzle in and pipe the buttercream onto each cupcake
- STEP 9Finally , top with fresh fruit and serve
