Method

  • step 1

    Heat the oven to 140C/120C fan/gas 1 and line a large baking sheet with baking parchment. Combine the oats, bran flakes, almonds, mixed seeds, raisin & nut mix, turmeric and ginger in a large heatproof bowl using your hands.

  • step 2

    Melt the coconut oil in a small pan over a low heat, then remove from the heat and stir in the maple syrup. Pour this over the granola and stir to combine. Whisk the egg white until foamy and slightly thickened, then pour this over the granola and stir again to combine.

  • step 3

    Tip the granola onto the tray and press down gently using a spatula. Bake for 1 hr, turning the tray around halfway through. Leave to cool completely on the tray. Will keep in an airtight container for up to two weeks.

Just made it very nice thank you. I didn’t have any bran flakes so I use Flex seed. I will also use a little bit more ginger as I quite like the spice.

I left out the tumeric but it still tasted fab

Not too sweet. Very crunchy with lovely spicy smell. Made twice already
