Method

  • step 1

    Fry the onion and garlic in the oil until softened. Add the tomatoes and sugar, a little splash of vinegar and some seasoning, then simmer for 20 mins until really thick. Stir in the turkey and transfer to a baking dish. Heat oven to 220C/200C fan/gas 7.

  • step 2

    Tear over the mozzarella in chunks, then scatter over the breadcrumbs with a bit more ground pepper. Bake for 20 mins until turkey is piping hot through, and the top is golden and bubbling. Eat with mash, jackets, rice or pasta

This was really easy to make and really tasty. I did it using cheddar rather mozzarella out of choice, but very tasty. I made the sauce ahead of time, and was able to remove some to add beans for a veggie alternative as well. Tasty, easy and flexible. Will make again.

We first cooked this for a crowd last Christmas, but now use smaller quantities for the two of us as a regular 'leftovers' dish. I interchange mozzarella and mascarpone depending on what's in fridge.

We had this with pasta & a green salad to use up the last of our turkey, we stirred in some mascarpone as suggested on the chicken cacciatore - it was a lovely change from turkey curry.
