Method

  • step 1

    Heat the oil in a large saucepan and add the onion. Fry for 5 mins over a medium heat or until starting to soften, then add the chilli, fry for another 2 mins, then add the garlic, spices, coriander stalks and chipotle paste. Stir well and sizzle for a min or so.

  • step 2

    Tip in the tomatoes. Fill the can with water, pour that in, refill the can halfway with water, then add that too. Add the rice. Mix well, bring to the boil, then reduce to a simmer for 25-30 mins, covered with a lid, until the rice is tender and the liquid has all been absorbed. Stir through the coriander leaves. Try using the rice in our Brazil nut burritos.

Petty good rice recipe. I followed the instructions; cooked for the max time of 30 and I received a nice, mellow, richly flavours rice. Next time I'll be increasing the paprika and cumin amounts as I could have done with a little more spice to make it truly Mexican.

This recipe is bad. Way too much water for the amount of rice, I followed measurements and directions exactly and the rice was complete mush. It’s also flavourless, and I added quite a bit of salt. Plain rice tastes much better. Wish I’d read the comments before wasting ingredients on this.

It did taste nice but unfortunately quite plain and it made a lot more than I was expecting (not a bad thing but just to keep in mind). It would be cool if the recipe included at the bottom other things it could go well with other than linking to other recipes too.
