Method

  • step 1

    Heat oven to 190C/170C fan/gas 5. Melt the butter in a pan, stir in the flour and cook for 2 mins. Add the onion and garlic and cook for 3-5 mins until soft. Add the mascarpone, then slowly add the spinach liquid, stirring until smooth. Cook for 4-5 mins until the sauce thickens.

  • step 2

    Stir in the cheddar, jalapeños, celery salt, paprika and spinach. Transfer to a baking dish and bake for 40 mins until golden.

I didn’t have any mascarpone so used soured cream instead and added Parmesan was well as the cheddar. I didn’t measure any of the ingredients which is unusual for me. It was delicious and I will definitely make it again.

This is absolutely Irving like spinach madeline. I’m from the town in which it originated so I can certainly attest to this. Call it something else. If you want a proper spinach Madeline recipe I suggest River Roads because this recipe is an abomination.

I remember eating this when I went out to Louisiana - had been trying to remember what it was for years. Good recipe - I up the chilli a bit myself, but mmmmmm!
