Method

  • step 1

    Put the cauliflower florets in a food processor and pulse to make grains the size of rice. Tip into a microwaveable bowl and stir in the cloves, cinnamon stick, turmeric and curry leaves.

  • step 2

    Mix well, cover with cling film, pierce and microwave on High for 3 mins. Fluff up with a fork and serve.

I don’t have a microwave. Could I cook this in the oven? How long? And does it need to be covered?

Hi, thanks for your question. We'd recommend cooking it in a large frying pan. Heat a teaspoon of oil and add the cauliflower and fry for about 3 minutes. Stir in all the spices and fry for a further 2-3 minutes. If you don't want to add oil then you can add a teaspoon of water and cover the pan…
