Method
step 1
Mix the cucumber, tomatoes, onions and pomegranate seeds together in a mixing bowl. Season well, then add the lime juice and olive oil, mix well again and tip into a serving dish.

Hi, thanks for your question. The fresher the better for this salad as it will begin to lose its crunch over time. However it will be fine in the fridge, ideally in an airtight container, for about 2 days (any longer and the tomatoes will become very soft). We hope this helps. Best wishes, BBC Good…
