Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Toss the potatoes, oil, garlic and thyme on a shallow roasting tray and mix will with your hands to coat in the oil. Season well. Roast for 25 mins until the potatoes are just turning tender when pierced with a knife.

  • step 2

    Whisk the honey and mustard together in a small bowl. Season the pork chops with salt and pepper, then brush with half the marinade. Nestle into the potatoes on the tray, and bake for another 10 mins before turning the chops and spooning over the remaining glaze. Continue to bake for 10 more mins until cooked through.

Your average jar of mustard is approx 180g so that’s less than half a jar. Honey jars are bigger. So your calculations are off ruthie.

This was simple and delicious. I halved everything to serve 2 - so it looked a lot like the picture illustrating the recipe - and it worked well. My thick pork chops needed 30 minutes to cook, not 20. There was too much honey and mustard, it ran off the chops into the tray If I repeated this, I would use half as much.

If you plan to sear your pork first like I did don’t put the honey and mustard dressing on yet…I lost most of my sauce on the cast iron pan, next time I’ll only sear with only salt and pepper and before I put in oven I’ll then lather it with the sauce…cooking for 4 I had to make veggies on one tray…

I should have seared mine to get some colour and crisp up the fat. As it was I had to put the chops in a separate oven dish and ramp up the heat to get any colour on them at all!
