Method

  • step 1

    Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.

  • step 2

    Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

I’m allergic to cumin. Can this be made without curry paste? I don’t particularly like the smell or taste of curry either as it happens.

Probably best you move on then. Why would you purposely omit the spices that make the dish? It's like saying I'm making fish and chips but hate fish and potatoes. Find a spice free recipe.

I assume you can use cut up chicken breast to cut the calories or something like quorn?

Certainly smaller peices of chicken to cut calories. Just like having your pizza cut into 6 slices instead of 12 as 12 slices is a lot of pizza right? :) Much Love

It would be great to get a slow cooker version of this so I could just put it on and leave it without worrying about the rice sticking to the pan and burning. I guess a couple of hours in the slow cooker would suffice but any guidance would be great, thanks.

Hi, thanks for your question. We're sure this would work in the slow cooker but I'm afraid we haven't tested it so can't give timings or exact instructions. As a guide, rice usually takes around 3 hours to cook in a slow cooker. We hope this helps. Best wishes, BBC Good Food Team.
