
Maple-glazed sausages & parsnips with herby lentils
Swap out the parsnips for sweet potatoes if you like in this sausage dish cooked in an air fryer. With just 15 minutes’ prep, it's a quick win for cold nights
- 2 tbsp olive oil
- 2 garlic clovesgrated
- 11/2 tbsp wholegrain mustard
- 1 tbsp maple syrup
- 8 sausages
- 4 parsnips(roughly 400g), chopped into 5cm batons
- 2 x 250g packets of ready-cooked lentils
- 10g parsleyfinely chopped
- 10g chivesfinely chopped
- 1 lemonzested and juiced

Method
step 1
In a small bowl, whisk together the olive oil, garlic, mustard and maple syrup. Season well with salt and pepper, then set aside.

Line the air fryer basket with foil. Put the sausages and parsnips in, spacing them out a little. Heat the air fryer to 180C and cook for 10 mins, then drizzle with half of the maple glaze mixture and toss well to coat. Cook for another 15 mins.
step 3
Cook the lentils following pack instructions, then mix with the herbs, lemon zest and juice, and plenty of seasoning. Split between four plates then top with the sausages, parsnips and a final drizzle of the remaining dressing.
