Method

  • step 1

    Heat the oven to 220C/200C fan/gas 8. Tip the gnocchi, courgette and tomatoes into a large roasting tray. Add the artichokes and oil, the bashed garlic cloves and chilli flakes, and season well with salt and freshly ground black pepper. Mix all the ingredients together with your hands, then bake for 30-35 mins until the gnocchi are crisp at the edges and the veg is soft.

    Meanwhile, mix the ricotta and lemon zest together in a small bowl, then season with salt and pepper to taste. Dot this over the gnocchi and sprinkle over the basil.

  • step 3

    Divide the gnocchi between two bowls, mixing them well so the ricotta breaks down to make a creamy sauce. Serve with the lemon wedges for squeezing over.

This was so delicious. I followed the recipe more or less exactly and I couldn’t get enough. Kids have also both eaten it without complaints - a new staple!

FWIW I cooked in the air fryer for 25 mins at 170

I made this for the first time tonight. It was full of flavour and so easy. I would recommend reducing the heat or reduce the amount of cooking time as the gnocchi was slightly overdone. I will definitely be making it again.

Instructions are incomplete no mention of cooking the gnocchi first it obviously needed it, very disappointing

Thanks for this comment. Just about to make it with a packet of gnocchi and wondered whether I needed to cook it first as they are v hard otherwise. Don't know why mndmorris142122 had to be so rude - I assume they either made their own gnocchi from scratch or haven't actually tried the recipe.
