Method

  • step 1

    Cook the gnocchi in a large pan of lightly salted, boiling water. Drain and reserve 200ml of the cooking water.

  • step 2

    Heat the butter in a large frying pan. Add the gnocchi, cheese and pepper as well as 150ml of the cooking water, raise the heat a little and stir vigorously until melted and the gnocchi is well coated. Pour in more of the reserved water if you like it saucier. Season with a little salt. Transfer the gnocchi to bowls and serve with a mixed salad, if you like.

Good, wholesome, hearty dish; the sauce may be modified by adding egg yolk and guanciale to really take it up a level. Those who complain of too much pepper really ought not to eat Italian food.

Haven't left a review before until now - good, quick recipe - BUT - far too peppery! I actually only did 1 tsp of pepper as opposed to 2 tsp. It was still very spicy so next time I would only do half a teaspoon

Far, far too much pepper. 1/2 tsp plenty otherwise you just taste pepper and it’s unpleasant. Have done a couple of times now, reducing the pepper each time. Otherwise easy, quick and tasty.
