Summer sausage rolls
When the weather is warmer, bring some sunshine flavours into everyone’s favourite afternoon tea and picnic snack
- 50g fresh root gingerroughly chopped
- 300g caster sugar
- 2 lemonssliced, plus extra to serve
- sparkling water

Method
step 1
Place the ginger, sugar and lemon slices in a pan with 150-200ml water. Bring to the boil, then cook until the sugar dissolves. Take off the heat, leave to cool, then press through a sieve.
step 2
To serve, pour into a pitcher and top up with sparkling water and extra lemon slices.

You can store the syrup in the fridge for up to 1 week.

Next time I will add a little more ginger or possibly grate what I do use to get a bit more of the ginger flavour through.

Fantastic drink. I add 1 lime to the mix and I keep it for a bit longer so that it becomes more syrup-y and its amazing. Even now in the winter we love it :)

What is the best sparkling water to cordial ratio for this recipe?

Thanks for your question. We really think this is down to personal preference. You could mix up some in a small glass to see what you like then make up a pitcher if serving for a party. Let us know how you get on!
