Method

  • step 1

    Heat the oven to 180C/160C fan/gas 4 and line a baking tray with baking parchment. Put everything in a bowl and mix well until it's combined and has a wet sand-like consistency.

  • step 2

    Form 10-12 balls of dough roughly the size of a walnut and put onto the baking tray a few centimetres apart. Push down to create a disc a couple of centimetres thick, then put in the oven and bake for 12-14 mins, until lightly golden. Allow to cool for 10 mins before removing to a wire rack and cooling completely.

Crumbly and a bit dry as others have noted. Nice crumbled into some Greek yogurt. Would make again.

Tried these for the first time. Mine did not brown. They have good flavour but are way too dry. I did not use chocolate chips. They would have benefited from an egg glaze. I’m going to add a chocolate icing in a bid to improve them.

Lovely cookies, nice texture, a bit crumbly but not bad for a relatively healthy version cookies. Super easy to make too

So easy to make and not used coconut flour before. Light texture and slightly crumbly. Added dark chocolate chunks.
