- seeds scraped from 1 vanilla pod
- 3 tbsp brandy

Method
step 1
Mix together the crème fraîche, vanilla seeds, brandy and sugar. This can be chilled for up to 2 days – just give everything a good stir. sprinkle on a little extra sugar before serving.

I tried this recipe today - just as a trial to go with some mince pies. I made a third of the recipe, the only change being a couple of drops of vanilla essence as no beans handy. Added more brandy as there was not much flavour of it. We thought there was a slight sour taste that one gets from…
