Method

  • step 1

    Put the peanut butter in a small bowl and stir in 3 tbsp of just-boiled water until smooth. Add the chilli sauce and lime juice, and mix well.

  • step 2

    Cut the chicken breasts into thin slices and place on a board with the bowl of peanut sauce. Put the lettuce leaves, spring onions, cucumber and carrot in separate piles alongside.

  • step 3

    Put slices of chicken into the lettuce leaves, then top with the vegetables and peanut sauce.

Had this for dinner last night. The sauce came out nice. I think I'll add even more sweet chili and lime next time. I recommend this meal!

Hello, Does the sauce keep well? I'm on my own at the moment and considering having these a second time klater in the week. Thanks in advance for your advice

These are very tasty, and simple to put together (apart from the fiddly veg chopping!) They're fun to eat, and healthy yet surprisingly filling.

This was great- and despite how simple and low calorie it is, I thought it tasted great and kept me full. You just need to have the patience to cut the veg up really small!
