Method

  • step 1

    Pour the oil into a saucepan and fry the garlic over a medium heat for 1-2 mins until fragrant, but not browned. Add the chilli, fry for another minute, then add the tomatoes along with 1 tsp salt and ½ tsp sugar. Stir well to combine the ingredients and simmer gently for 20 mins, stirring regularly. The sauce will thicken slowly as it cooks.

    Taste and adjust the seasoning if needed. Serve stirred through pasta, or blend it first to create a smoother sauce if you prefer. Will keep chilled for up to five days.

Both simple and simply delicious. Other suggestions to add various ingredients defeats the whole purpose of this dish. I love the elegant cleaner taste of ‘good’ olive oil, garlic, salt and tomatoes. Definitely omit the

Very slightly less salt and add tomato puree. Lovely, and so simple. I make it with king prawns.

This recipe really needs onions and garlic in the base, plus some tomato paste (I use sun dried) to give it more flavour. Otherwise it has no depth of flavour.

Nice simple recipe, perfect for a midweek meal I added onions and some veg to like to pad it out .even my daughter loved it and she's the fussiest of eaters .
