Method

    To make straight, neat chips, peel the potatoes and trim away all the rounded edges so they become rectangular blocks. Cut the blocks into batons – they should be somewhere between fries and thick chips, as if they're too thin, they might break; too thick, and they won’t cook through (if you like, save the offcuts to make mash or add to soups). Alternatively, cut the unpeeled potatoes into chips without trimming, if you're not bothered by neatness. Rinse the chips and pat dry with a clean tea towel.

    Tip the chips into the bottom of an air-fryer (the part with the paddle), add the oil, and toss the chips in the oil so they are evenly coated. Program the fryer to cook for 30 mins using the paddle. After this time, check that the chips are tender and cooked through. If they're not, cook for a further 5 mins. Season well.

What is a paddle? I have an air fryer and have many others, none of which include any paddles, so am mystified as to what this is.

I had a Tefal air fryer with the paddle, so did try these chips a couple of times. Firstly, the Tefal instructions stated that you had to soak the chips, about half an hour. Then thoroughly dry the chips. Then toss in the oil and set air fryer temperature. Cook, not for 30 minutes, but for 50-55…

What temperature? 35 mins hints at 180 to 200°C which would give you dark, bitter chips. I rather cook mine at 160°C for 50 mins flipping the basket twice to ensure all are evenly cooked. The chips are cooked through, without being dried out by excessive heat, and lightly browned.

I have just tried my new ninja airfryer. Ninja recommended 200° but I found this browned them unevenly and they did not look appealing or taste nice. Tonight I have cooked them at 150°for 40 mins and they have come out golden brown and tasted lovely. Glad I Exsperimented.
